Prather Ranch Meat Company lassoes larger space at the Ferry Building Marketplace

San Francisco: Prather Ranch Meat Company, a Bay Area company with a well established reputation for selling high quality, humanely raised meat products such as dry-aged beef, heritage breed pork and lamb, American bison and local poultry, is excited to announce it is expanding its operations. The company is named after and sources all beef from the Prather Ranch, a closed herd, certified organic and humane beef operation in Northern California. It was the second retailer in the country to be designated “Certified Humane” by Humane Farm Animal Care (HFAC), the Virginia-based non-profit organization that certifies humane treatment of farm animals. As one of the original tenants that made the leap from the Green Street farmers market to the Ferry Building Marketplace in 2003, Prather Ranch Meat Company (PRMC) now has a large and loyal Bay Area following and is poised to take a new step.

Co-owners Doug Stonebreaker and Steven McCarthy will guide the company forward as it moves into a larger space at the Ferry Building Marketplace. The move will more than double the amount of square feet of the company’s current retail storefront operation, providing more room to showcase their expanding array of top quality meat products. They will continue to sell their beef from Prather Ranch, naturally raised pork, grass-fed lamb, local poultry and other products as before, but will expand to add a ready-to-eat quick service food component. Prather Ranch Meat Company will serve a variety of items each day including breakfast, lunch and take-home items, mainly prepared in house. Chef Erica Holland-Toll will head up the expansion into prepared foods. Before joining Prather Ranch Meat Company, Holland-Toll was the Executive Chef of Ducca Restaurant and The Lark Creek Inn. She has a long relationship with the operation and has been using meats from the business for many years. A regular at Bay Area farmers markets, she plans on sourcing all vegetables and grains for seasonal salads, soups and sides from the local markets and breads from Acme Bread Company.

The menu will focus on regional American specialties and will utilize all the many types of meats available from the Prather Ranch Meat Company. Sandwiches such as barbecued beef, Carolina style pulled pork, spiced pastrami on rye and meatball subs will be available as well as beef and bison burgers, hot dogs and the full selection of PRMC sausages. Hand-cut chuck & bean chili, French fries and onion rings will also be offered. All fried items will be fried in organic beef tallow or pork lard. Other offerings will include various salads, soups, house-made pickles and condiments. Breakfast will include such specialties as eggs & scrapple, lardy biscuits & gravy and a crispy pork chop sandwich with seasonal jam.

Prather Ranch Meat Company has been bringing sustainably and humanely raised meat products to market since the late 1990’s and, in doing so, has helped support a variety of small ranch operations as a core of its business. The company focuses on supporting small farms and ranches through meat sales and customer education about sustainable ranching and humane animal husbandry. They hope to be open in spring of 2011.
