Event Details

Stop by the CUESA Classroom for a demonstration class featuring the bread bounty of the Ferry Plaza Farmers Market.

In this unique class, author and bread baker Michael Kalanty will take you through a tasting of modern breads, loaves made by some of the most prominent bakers in the Bay Area. “Each bread tells a story: sometimes it’s about flavor, sometimes nutrition and gut health, or local economics of growing your own food,” and these stories accompany each of the breads you’ll sample. Kalanty worked with a variety of farmers, millers, and bakers while writing his newest book, How To Bake MORE Bread. He’ll be signing copies at the conclusion of today’s class.

With over 20 years of baking and cooking experience, Michael Kalanty is an experienced educator in all things bread. Classically trained in French kitchens and patisseries, he has baked in France, Brazil, and Italy. His first book, How to Bake Bread: The Five Families of Bread, is a cult favorite of beginning bakers. He authored the baking and pastry programs for several culinary schools and served as Director of Education for the California Culinary Academy in San Francisco. Kalanty is also a Certified Master Taster and serves on Slow Food International’s World Education Council.

All demos take place in the CUESA Classroom (under the white tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.

A book signing will follow the demonstration class.

Event Details

To many Americans, rye bread is a bland, store-bought loaf with an oval cross-section and, sometimes, a sprinkling of caraway. But true rye bread— the kind that stands at the center of northern and eastern European food culture—is so much more. In The Rye Baker: Classic Breads from Europe and America, Stanley Ginsberg brings this overlooked grain into the culinary limelight, introducing readers to the rich and unimaginably diverse world of rye bread.

Readers will find more than 70 classic recipes that span rye’s regions and terroir, from dark, intense Russian Borodinsky and orange-infused Swedish Gotland Rye to near-black Westphalian Pumpernickel (which gets its musky sweetness from a 24-hour bake), Spiced Honey Rye from France’s Auvergne, and the rye breads of America’s melting-pot, such as Boston Brown Bread and Old Milwaukee Rye. Chapters detailing rye’s history, unique chemistry, and centuries-old baking methods round out The Rye Baker, making it the definitive resource for professional and home bakers alike.

Stop by the CUESA Classroom for a cooking demo featuring the seasonal bounty of the Ferry Plaza Farmers Market.

“Yan Can Cook, So Can You!” has always been the motto of Martin Yan, chef extraordinaire and popular television host recognized from Shanghai to San Francisco. Promoting Chinese cuisine, making it easy for the cook and tasty for the guests has been his life-long mission. Born in Guangzhou in Southern China, Chef Yan is technically a second generation ‘culinarian,’ who was first inspired by his mother in the tiny kitchen of their family restaurant.

After receiving his formal restaurant training in Hong Kong, Chef Yan immigrated to Calgary, Canada where on one snowy day he was asked to appear in a daytime news program to demonstrate Chinese cooking. The rest, as they say, was television history. From that small station in Canada, the Yan Can Cook Show grew to become one of the most popular cooking programs on public television, both in North America and on the global stage. It has won the James Beard Award for Best Food Documentary Show for two consecutive seasons.

All demos take place in the CUESA Classroom (under the white tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
